Chocolate, Caramel, Marshmallow, Whiskey & Bacon Bark

Some desserts are sensible. Some desserts are what happens when someone dares you at a cookout. This bark belongs to the second group, and it is easily the most interesting thing I have set on a potluck table all year.

The layers go chocolate, then marshmallow melted with whiskey until it turns smooth and elastic, then a soft ribbon of caramel, then another layer of chocolate, and finally crumbled bacon scattered over the top while the chocolate is still wet.

It sounds like a dare. It eats like a treat. Sweet and salty, chewy and crunchy, all in the same bite. That is exactly why the plate empties before the coffee comes out.

I am usually a fairly predictable dessert person. Give me a solid brownie or a chocolate chip cookie and I am content. My sister Mary is the one in our family who orders the strangest item on every menu and never regrets it.

This bark is the sort of thing I would normally leave to her. I liked it anyway, and I have a strong suspicion the whiskey had something to do with that.

Here is how the bark comes together, layer by layer:

  • Semi sweet chocolate base. About half of the melted chocolate goes into the pan first and sets in the freezer to give the bark a firm floor.
  • Whiskey marshmallow. Mini marshmallows and butter melt together in the microwave, and one tablespoon of whiskey gets stirred in for a soft warmth that keeps the layer from tasting like plain candy.
  • Caramel. Twenty five unwrapped caramels melt into a smooth, stretchy middle that is the chewiest part of the bite.
  • Top chocolate. The rest of the chocolate goes over the caramel and gets smoothed flat.
  • Bacon. Two strips of crisply cooked, crumbled bacon land on top while the chocolate is still shiny, so they stay put once it sets.

The texture is the real story. Because the whole thing is built cold, the bark slices clean and snaps when you break it, but the inside stays soft and a little gooey from the marshmallow and caramel.

It is not a delicate dessert and it is not supposed to be. It is the kind of candy that makes people stop mid sentence.

One thing worth knowing before you start: this bark wants to live in the refrigerator. At room temperature it softens and the middle turns gooey.

Straight from the fridge it cuts neatly with a sharp knife and holds its shape on a platter, which matters a lot when you are packing it into a carrier for a church supper, a picnic, or a holiday tray.

It also travels beautifully. Cut it into rough squares or shards, tuck the pieces into a parchment lined tin, and you have a make ahead dessert that survives the car ride. I have used broken shards to top Chocolate Whiskey Cupcakes, and that combination disappears even faster than the bark does on its own.

The short version: 12 servings, 45 minutes of prep, and about 5 minutes of actual cooking in the microwave. Most of that prep time is waiting on the freezer, which is my favorite kind of hands off work.

You do not need much gear. An 8×8 inch pan lined with parchment paper, two microwave safe bowls, and a silicone spatula will get you the whole way. The parchment flaps matter more than they sound, since they are what let you lift the finished bark out in one piece instead of digging it out of the pan.

The whiskey is subtle. One tablespoon folded into the melted marshmallows does not turn this into a boozy dessert. It simply adds a warm edge that keeps the marshmallow layer from tasting flat against all that chocolate and caramel.

It is a good fit for game days, holiday trays, bake sales, and any gathering where people graze standing up. Cut the pieces smaller than you think you need, because a little goes a long way.

If you are the person who brings the same pasta salad to every gathering, this is your chance to switch things up. Nobody expects chocolate, caramel, marshmallow, whiskey, and bacon to work together, and that surprise is half the fun.

Welcome!

I am Dianna, and this site is where I share elevated but easy recipes alongside effortless entertaining ideas. The goal is simple: help you cook with confidence and host with joy, using fresh ingredients, thoughtful details, and plenty of warm hospitality.

Nothing here is meant to feel fussy. If a recipe needs a specialty pan and three days of planning, it usually does not make the cut.

What does make the cut is food that looks impressive on a table and still feels doable on a busy weeknight. This bark sits right in that sweet spot, and it is a perfect example of the kind of recipe you will find here.

Ingredients

This is a short, ordinary grocery list. Nothing here is hard to find, and if your pantry is well stocked you may already have most of it on hand.

  • 1½ cups semi sweet chocolate chips
  • 2 cups mini marshmallows
  • 1 tablespoon unsalted butter
  • 1 tablespoon whiskey
  • 25 wrapped caramels, unwrapped
  • 2 strips of crisply cooked bacon, crumbled

Two quick notes. Use wrapped caramels rather than caramel sauce, so the middle layer holds its shape the way the recipe intends. And cook the bacon until it is genuinely crisp before you crumble it, because soft bacon will not stay crunchy sitting on top of warm chocolate.

Instructions

Set aside about an hour for chilling in between steps, and clear a level spot in your freezer before you begin. Everything else moves fast.

  1. Prepare an 8×8 inch pan by lining it with parchment paper. Create flaps that hang over the edges for easy removal. Set the pan aside.
  2. In a medium microwave safe bowl, heat the semi sweet chocolate chips in 30 second intervals until melted and smooth. Be careful not to scorch them, and stir between intervals so the chocolate melts evenly.
  3. Pour about half of the melted chocolate into the prepared pan and smooth it evenly with a silicone or offset spatula. Place the pan in the freezer to harden, about 15 minutes.
  4. Meanwhile, place the marshmallows and butter in a microwave safe bowl and heat on high for about 45 seconds. Stir, then return the bowl to the microwave for about another 45 seconds. Add the whiskey to the melted marshmallows and stir until the mixture is smooth and elastic.
  5. Working quickly, pour the melted marshmallows onto the set chocolate layer and smooth them as evenly as possible. A silicone spatula is the best tool for this job.
  6. Return the pan to the freezer and freeze for another 15 minutes.
  7. Place the unwrapped caramels into a bowl. Using the same bowl you melted the marshmallows in keeps the mess to a minimum. Heat for about 45 seconds, stir, then continue heating in 30 second intervals until the caramel is melted and smooth.
  8. Quickly pour the caramel over the marshmallow layer and spread it as evenly as possible. It will begin to harden, so move fast. Return the pan to the freezer for 15 more minutes.
  9. Pour the remaining melted chocolate over the caramel layer. Smooth it evenly, and while it is still wet, sprinkle it with the crumbled bacon.
  10. Freeze for a final 15 to 30 minutes, or until the bark is completely set.
  11. When you are ready to cut, remove the bark by gently pulling on the parchment flaps, then carefully peel it from the parchment. Cut it into pieces with a sharp knife.
  12. Keep the bark refrigerated, since it softens and the interior becomes gooey at room temperature.

Move quickly with the marshmallow and caramel layers. Both begin firming up as soon as they leave the microwave, and a fast hand with a silicone spatula gives you the neatest layers.

Plan on roughly an hour of freezer time in total, spread across four chilling stretches. That makes this a good recipe to start in the morning for an evening gathering, or the night before for a lunch the next day.

When you serve it, keep the pieces cold until the moment they hit the table and set out a small stack at a time. That way the bark stays crisp instead of softening in a warm room.

Dianna’s Tips

This recipe was found at Whiskey Disks and originally came from Endless Simmer, so the credit belongs there. It has clearly made the rounds for good reason.

A few habits make it easier. Reuse the same bowl for the marshmallows and the caramels to cut down on dishes. Keep the pan level in the freezer so the layers stay even. And always slice the bark while it is cold, then return whatever you are not serving right away to the refrigerator.

The prep time covers melting, layering, and waiting on the freezer, while the 5 minutes of cook time is almost entirely microwave work. Make it ahead, keep it cold, and you have a sweet and salty dessert that looks like far more effort than it actually took.

FAQs

What is the best way to cut chocolate bark without it cracking?

Let the bark sit at room temperature for a minute or two to soften slightly before cutting. Use a sharp knife to cut the bark into pieces, and remove it from the pan by gently pulling on the parchment paper flaps. Keeping the bark refrigerated until serving helps maintain clean layers.

How should I store chocolate caramel marshmallow whiskey bacon bark?

Store the bark in an airtight container in the refrigerator, as the marshmallow and caramel layers soften and become gooey at room temperature. It can be kept for up to one week. The bark is best served cold or cool straight from the fridge.

Can I use milk chocolate instead of semi-sweet chocolate for this bark?

Yes, you can use milk chocolate or dark chocolate instead of semi-sweet chocolate chips for a different flavor profile. However, semi-sweet chocolate is recommended for its balanced sweetness that complements the sweet marshmallow and caramel layers. High-quality chocolate melts more smoothly and yields better results.

Can I make this bark without whiskey?

Yes, you can omit the whiskey entirely for a non-alcoholic version. The whiskey adds a warm, complex depth to the marshmallow layer, but the bark will still be delicious without it. Simply skip adding the whiskey when melting the marshmallows and butter.
