Chocolate Pistachio Kunafa Cookies

These cookies hide a surprise. On the outside they look like a rich, dark chocolate cookie with a few chocolate chunks pressed into the top. Break one open, and a center of crunchy pistachio kunafa and creamy pistachio spread spills out, warm and nutty.

The dough is built on browned butter and cocoa, so it stays soft, fudgy, and just barely set in the middle. It is the kind of dessert that makes people stop mid sentence.

The idea grew out of the Dubai chocolate bar trend. FIX Dessert Chocolatier in Dubai created a milk chocolate bar filled with pistachio kunafa and labeled it “can’t get knafeh of it,” and the bar spread across social media fast enough that it seemed to appear in every other feed for months.

The combination is simple and very hard to resist: smooth milk chocolate, crisp shredded pastry, and a pistachio filling that tastes like the inside of a really good baklava.

I ran into the reach of that trend while traveling in Langkawi, Malaysia, during a mangrove tour. When the other travelers found out I live in Dubai, the conversation turned to that chocolate bar.

A couple from Europe had tried a version of it, someone else had only seen it online, and everyone wanted to know whether it was worth the hype. It was a small moment, but it stayed with me.

Food from one city can travel that far and still get a boat full of strangers talking like old friends.

That same chocolate bar is what inspired the Pistachio Kunafa Brownies I shared earlier. The cookies came afterward, because a cookie is easier to hand around than a brownie and it travels better to a potluck, a bake sale, or a holiday tin.

This version keeps everything that makes the bar so good and tucks it inside a soft chocolate cookie.

The recipe makes 10 to 12 cookies. Plan on about 25 minutes of prep and roughly 10 minutes in the oven at 350°F (180°C), with extra time set aside for chilling and freezing the filling so it holds its shape.

There are two parts to make, the pistachio kunafa filling and the brown butter chocolate dough, and both come together quickly once the ingredients are lined up on the counter.

Do not skip the freezing step for the filling. A firm, cold center is what keeps the pistachio kunafa tucked inside the dough instead of leaking out onto the baking sheet.

The payoff is worth the wait. Serve them slightly warm and the filling is gooey. Serve them at room temperature and the filling is creamy with a little crunch from the toasted kunafa. Either way, a drizzle of melted pistachio spread over the top makes them look like they came from a pastry case.

Why should you make these cookies?

The base is a Death by Chocolate cookie dough made with browned butter, so the cookie is soft and gooey when it comes out of the oven and stays tender for days.

Pistachio kunafa goes right into the middle, and the result tastes like a special occasion bake rather than an everyday supermarket cookie. They are also genuinely easy to make.

Once the butter is browned, the dough comes together in one bowl, and the filling is just a few ingredients stirred together.

  • Browned butter gives the dough a toasted, almost caramel note that plain melted butter cannot match.
  • The pistachio kunafa filling oozes out when you bite in, so every cookie has a built in surprise.
  • The dough mixes up in one bowl after the butter is browned, which keeps cleanup small.
  • Baked cookies keep well for days, reheat in seconds, and freeze beautifully.

What are the ingredients used for making Pistachio Kunafa Chocolate Cookies?

Two short lists cover everything: the filling and the double chocolate dough. Nothing here is hard to find, and the two items that may need a quick search, kunafa pastry and pistachio spread, are easy to buy online or at a Middle Eastern grocery store.

Ingredients needed for Pistachio Kunafa Filling

The filling is where the character of these cookies comes from, so it is worth choosing each item with a little care.

  • 1 cup (90 g) kunafa pastry. Kunafa dough is also sold as kataifi pastry or shredded phyllo. It is not the same thing as vermicelli, but fine vermicelli can be used as a substitute if you cannot find kunafa dough where you shop.
  • 1 tablespoon butter or ghee, for roasting the kunafa dough.
  • 3/4 cup (200 g) pistachio spread. Look for a creamy, sweetened pistachio spread. You can also make your own by blending blanched, peeled pistachios into pistachio butter and sweetening it to taste.
  • 2 tablespoons tahini (optional). Tahini is a ground sesame paste used in many Middle Eastern dishes. It is optional here, but it is worth adding because it enhances the flavor and may help balance the sweetness of the pistachio butter.

Ingredients you will need for the Double Chocolate Cookies

Butter matters more than most people expect. Use a high quality butter, ideally one with a higher milk fat percentage, because it gives the cookies a richer flavor and helps them hold their shape and structure in the oven. Margarine is not a good swap here.

Cocoa powder is the other one to be picky about. A high quality cocoa makes a noticeably richer chocolate cookie, and a dull, low quality cocoa will flatten the whole batch.

All purpose flour is the best and most easily available choice, and baking soda is the main leavening agent that gives a fluffy, soft cookie. Salt balances the flavors so the chocolate does not taste one note.

Brown sugar does more than sweeten. It gives a softer cookie that holds extra moisture, which is why these stay gooey instead of turning crumbly, and it is preferred here over white sugar.

Vanilla extract brings out the flavor, and a room temperature egg gives the best texture and mixes smoothly into the butter and sugar. A teaspoon of espresso or instant coffee powder does not make the cookies taste like coffee. It deepens and amplifies the chocolate.

Step by Step process of making Pistachio Kunafa Cookies

Work in this order: make the filling first, because it needs time in the fridge and the freezer, then brown the butter and mix the dough while the filling chills.

Step 1: Make Pistachio Kunafa Filling

Shred the kunafa pastry in a food processor or with a pair of scissors into pieces about 1 to 2 cm long. Add the butter or ghee to a large frying pan, and once it has melted, add the shredded kunafa.

Stir in the pistachio spread and tahini until everything is evenly combined, then refrigerate for 10 minutes so it firms up slightly.

Step 2: Make balls with the Pistachio Kunafa Filling

Once the filling has firmed up, divide it into 10 to 12 equal balls and set them on a tray lined with parchment paper. Rolling by hand works, though it gets messy, and a small cookie scoop makes it faster and tidier.

Freeze the balls for at least 15 minutes, or leave them in the freezer until the cookie dough is ready.

Add the butter to a small heavy bottomed saucepan over medium heat. Stir constantly with a spatula or a whisk until the butter melts, starts to foam, and turns a light golden brown.

Pull it off the heat right away and pour it into a mixing bowl. Let it cool for about 10 minutes, then stir in the espresso powder, whisk in the brown sugar until it dissolves, and add the vanilla and the egg, whisking well for a minute or two.

Sift in the cocoa powder, flour, baking soda, and salt, then fold with a spatula until no streaks of flour remain.

Take the pistachio kunafa balls out of the freezer and cover each one with a layer of cookie dough. The filling should not be visible from the outside, and the dough should cover it evenly. Keep going until every ball is wrapped with no dough left over, then press chocolate chunks into the tops.

Step 4: Bake and Enjoy

Bake in a preheated 350°F (180°C) oven for about 10 minutes on the lower middle rack.

These cookies are very soft straight out of the oven, so give them at least 20 to 25 minutes to cool and set before you dive in.

For a finished look, drizzle melted pistachio spread over the tops, then serve.

How can I store leftover Pistachio Kunafa Cookies?

Leftover cookies keep well, which is one more reason they work for gatherings. Stored covered at room temperature, they stay good for up to 3 days. In the fridge they last about a week, and a quick reheat in the microwave brings the filling back to a soft, gooey texture before you eat one.

Both baked and unbaked cookies can be frozen in airtight plastic containers or resealable bags. Let the baked cookies cool completely before freezing, and wrap them individually in plastic wrap so they do not stick together in the container.

When a craving hits, thaw a baked cookie at room temperature or warm it gently, and the pistachio kunafa filling comes right back to life.
