Ingredients

Scale

1 and 2/3 cups (210g) all-purpose flour for structure and lift

1/4 cup (21g) unsweetened natural cocoa powder for structure and lift

1 teaspoon baking soda for structure and lift

1/4 teaspoon salt for structure and lift

1/2 cup (8 Tbsp; 113g) unsalted butter, softened to add moisture and flavor

3/4 cup (150g) packed light or dark brown sugar to add moisture and flavor

1/4 cup (50g) granulated sugar to add moisture and flavor

1 large egg, at room temperature to add moisture and flavor

1 tablespoon milk (preferably buttermilk) to add moisture and flavor

2 teaspoons pure vanilla extract to add moisture and flavor

3/4 teaspoon gel red food coloring (optional)

1 cup (180g) white or semi-sweet chocolate chips (plus a few extra for tops) to enhance taste and texture

Instructions

1-Whisk together the flour, cocoa powder, baking soda, and salt in a medium bowl.

2-In a large bowl, cream the softened butter with the brown and granulated sugars until fluffy.

3-Beat in the egg, followed by the milk, vanilla extract, and red food coloring if you’re using it.

4-Gradually add the dry mix to the wet ingredients, stirring until just combined to keep the dough tender.

5-Fold in the chocolate chips, then scoop the dough onto your prepared sheets.

6-Bake for 10-12 minutes, watching for that perfect soft center.

7-Let them cool on the sheet for a bit before moving to a rack.

🍪 Do not overmix the dough to keep cookies tender and chewy.
❄️ Chill dough for 30 minutes before baking to minimize spreading for thicker cookies.
