4 ounces of spaghetti, broken into 2-inch pieces

1 large egg

1 cup sour cream (full-fat or light; avoid fat-free)

1/4 cup grated Parmesan cheese (preferably freshly grated or authentic)

1/4 teaspoon garlic powder

2 cups shredded Monterey Jack cheese

1 package (10 ounces) frozen chopped spinach, thawed and well-drained

1 can (2.8 ounces) fried onions, divided

Instructions

1-First, cook the spaghetti according to package directions, breaking it into 2-inch pieces before boiling until slightly firm. This takes about 8-10 minutes and sets the foundation for the dish.

2-In a large bowl, beat 1 large egg, then stir in 1 cup sour cream, 1/4 cup grated Parmesan cheese, and 1/4 teaspoon garlic powder to make the creamy base.

3-Drain the cooked spaghetti and mix it with the egg mixture, along with 2 cups shredded Monterey Jack cheese, the thawed and well-drained 10-ounce package of chopped spinach, and half of the 2.8-ounce can of fried onions.

4-Transfer everything to a greased 2-quart baking dish, cover it, and bake at 350°F for 30 minutes or until heated through.

5-Finally, remove from the oven, add the remaining fried onions on top, and bake for another 5 minutes until they turn golden brown. Serve warm for the best experience.
