Ingredients
– 2 baby eggplants, sliced lengthwise about half an inch thick
– Salt for sprinkling
– Olive oil for drizzling generously
– 10-ounce tub hummus or alternative
– 10-ounce tub tzatziki or alternative
– Half a bell pepper, cored
– 6 tomatoes, quartered
– 6 Persian cucumbers, sliced into spears
– Pitted olives
– 1 can (15 ounces) marinated artichoke hearts
– 6 ounces feta cheese, cubed
– 6 ounces baby mozzarella cheese balls
– 3 ounces prosciutto
– 6 fresh figs, halved
– 1 teaspoon spice
– Pita bread or rustic bread for serving
Instructions
1-First, place the eggplant slices on paper towels, sprinkle with salt, and let them sit for about 20 minutes to draw out bitterness. Pat them dry afterward to ensure they roast well.
2-Preheat the oven to 400 degrees Fahrenheit and place the eggplant slices on a lightly oiled baking pan. Drizzle them generously with olive oil and roast for 20 minutes until golden brown.
3-While the eggplant roasts, assemble the other ingredients on a large serving platter. Start by placing the hummus on opposite sides for balance.
4-Put the tzatziki sauce inside the cored bell pepper and position it at the center of the platter for a neat presentation.
5-Arrange the remaining ingredients like quartered tomatoes, sliced Persian cucumbers, pitted olives, marinated artichoke hearts, cubed feta cheese, baby mozzarella cheese balls, prosciutto, and halved fresh figs attractively around the platter.
6-Once the eggplant is done, remove it from the oven, sprinkle with 1 teaspoon of the spice, and add it to the platter. Cover and refrigerate if needed, then bring to room temperature before serving.
7-Finally, serve with warm pita bread or rustic bread for serving, perhaps alongside other easy dishes like a quick stir-fry from our site check out our chicken and broccoli stir-fry recipe for a complementary side.
