6 tablespoons extra virgin olive oil
4 large garlic cloves, minced
1 teaspoon dried thyme
Β½ teaspoon dried oregano
1ΒΌ teaspoon salt
Β½ teaspoon freshly ground black pepper
1Β½ teaspoons lemon zest (from one lemon)
Instructions
1. Place each chicken breast in a 1-gallon zip-lock bag and pound to an even Β½-inch thickness to ensure uniform cooking and prevent dryness.
2. In a separate zip-lock bag or bowl, combine olive oil, garlic, thyme, oregano, salt, pepper, and lemon zest.
3. Add chicken breasts to the marinade and massage well to coat evenly. Seal and refrigerate for at least 4 hours, preferably overnight.
4. Preheat grill to high heat and oil the grates to prevent sticking.
5. Grill chicken breasts covered for 2 to 3 minutes per side on high heat, or medium-high heat for about 6 minutes per side, until internal temperature reaches 165Β°F / 74Β°C.
6. Optionally baste with reserved marinade during cooking for added flavor.
7. Transfer grilled chicken to a platter and let rest for 3 to 5 minutes before slicing and serving.
