Ingredients

For frying: 1 cup flour, 1 cup milk, 1 egg, breadcrumbs or seasoned coating, oil for deep frying
Instructions
1. Warm the milk to 30°C (86°F) and add the starter culture to acidify; incubate for 30–60 minutes until thickened.
2. Add diluted rennet and let the mixture sit for 30–45 minutes until a firm curd forms.
3. Cut the curd into 1-2 cm cubes to separate curds and whey.
4. Slowly raise the temperature to 38–40°C (100–104°F) while stirring to contract the curds.
5. Drain the whey and press the curds to expel excess liquid, then salt to taste.
6. Cut into small curds and enjoy fresh for optimal squeakiness.
7. Add optional spices or herbs for flavor.
8. For fried curds, dip in batter or breading and deep fry at 180°C (350°F) until golden brown, 1–3 minutes per batch.
9. Serve with dipping sauces like ranch or marinara.
