Ingredients

– 1 pound spicy Italian ground sausage (use mild for kid-friendly version)

– 4 tablespoons butter

– 1/2 white onion, diced

– 1 tablespoon minced garlic

– 6 cups chicken broth

– 2 cups water

– 4-5 yellow potatoes, cut into 1-inch pieces

– 2 cups heavy cream

– 4 cups chopped kale

– Chopped bacon or bacon bits for optional toppings

Instructions

1-First, brown the sausage in a pot for 5-6 minutes and transfer to a plate. In the same pot, melt butter over medium heat and sauté the diced onion until translucent. Add minced garlic and sauté for 1 minute until fragrant.

2-Pour in chicken broth and water, then add the potato pieces, salt, and pepper, and bring to a boil. Cook until the potatoes are tender, which takes about 15 minutes. Stir in the chopped kale, heavy cream, and the cooked sausage, then adjust seasoning if needed.
