Ingredients

– 1 pound boneless skinless chicken breasts

– 2 tablespoons cornstarch

– 2 tablespoons vegetable oil

– 1 tablespoon minced garlic

– ½ tablespoon fresh minced ginger or ½ teaspoon ground ginger

– 8 ounces white button mushrooms

– 1 zucchini

– 3 tablespoons soy sauce

– 1 tablespoon rice vinegar

– 2 teaspoons granulated sugar

– Toasted sesame seed oil for garnish

– Sesame seeds for garnish

– Scallions for garnish

Instructions

1-Coat the chicken cubes in cornstarch to help them get that perfect golden brown in the pan.

2-Heat vegetable oil in a large skillet or wok over medium-high heat; cook the chicken for 6 8 minutes until it’s browned and cooked through, then set it aside.

3-Sauté the garlic and ginger in the same skillet for about 15 seconds until they’re fragrant, building a flavorful base.

4-Crank up the heat to medium-high; add the mushrooms and zucchini, and stir-fry for 4 minutes until they’re tender and slightly browned.

5-Whisk together the soy sauce, rice vinegar, and sugar in a small bowl to create the sauce.

6-Return the chicken to the skillet, pour in the sauce, and stir everything to coat; cook for 30 60 seconds until it’s all heated through and the sauce thickens up.

7-Take it off the heat and garnish with sesame oil, sesame seeds, or scallions if you like, then serve right away for the best taste!
