Instructions
1-Begin by washing and finely grating 2 cups of fresh zucchini. Squeeze out excess moisture using a clean kitchen towel to prevent sogginess in the cookies.
2-In a large mixing bowl, combine 1 1/2 cups of all-purpose flour, 1 tsp baking powder, 1/2 tsp cinnamon, and 1/4 tsp salt. Mix well to evenly distribute dry ingredients.
3-In a separate bowl, mix 1/2 cup brown sugar and 1/4 cup vegetable oil until smooth. For vegan adaptation, substitute oil with coconut oil and use a flaxseed egg.
4-Slowly add the dry ingredients to the wet mix, stirring gently. Then fold in the prepared zucchini, ensuring an even batter with moisture from the vegetable.
5-Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper or lightly grease it.
6-Drop spoonfuls of batter onto the baking tray, spacing them about 2 inches apart to allow spreading.
7-Bake for 15-18 minutes until the edges are lightly golden and a toothpick inserted into the center comes out clean.
