🥒 Zucchini Chocolate Chip Cookies Recipe for Soft and Moist Treats combine the nutrition of fresh zucchini with the indulgence of chocolate chips for a delicious, guilt-free snack.
🍪 These cookies offer a perfect balance of softness and moisture, making them enjoyable for both kids and adults who crave a wholesome treat.

  • Total Time: 27-30 minutes
  • Yield: 24 cookies

Ingredients

– 1 cup shredded zucchini, lightly blotted

– 2 cups old-fashioned whole rolled oats

– 1 cup all-purpose flour

– 1/2 teaspoon baking soda

– 1/2 teaspoon salt

– 1 teaspoon ground cinnamon

– 1/2 cup unsalted butter, softened

– 1/2 cup packed dark or light brown sugar

– 1/2 cup granulated sugar

– 1 large egg, at room temperature

– 1 tablespoon pure maple syrup (optional; honey or molasses can be used or omitted)

– 1 and 1/2 teaspoons pure vanilla extract

– 1 cup semi-sweet chocolate chips (substitutions possible: milk chocolate, white chocolate, mini chips, chocolate chunks, peanut butter chips, butterscotch chips, raisins, or nuts)

Instructions

1-Begin by washing and finely grating 2 cups of fresh zucchini. Squeeze out excess moisture using a clean kitchen towel to prevent sogginess in the cookies.

2-In a large mixing bowl, combine 1 1/2 cups of all-purpose flour, 1 tsp baking powder, 1/2 tsp cinnamon, and 1/4 tsp salt. Mix well to evenly distribute dry ingredients.

3-In a separate bowl, mix 1/2 cup brown sugar and 1/4 cup vegetable oil until smooth. For vegan adaptation, substitute oil with coconut oil and use a flaxseed egg.

4-Slowly add the dry ingredients to the wet mix, stirring gently. Then fold in the prepared zucchini, ensuring an even batter with moisture from the vegetable.

5-Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper or lightly grease it.

6-Drop spoonfuls of batter onto the baking tray, spacing them about 2 inches apart to allow spreading.

7-Bake for 15-18 minutes until the edges are lightly golden and a toothpick inserted into the center comes out clean.

8-Remove from oven and let cookies cool on a wire rack. Serve fresh or store as desired. Adapt cooking times slightly if using gluten-free flour blends.
