  • Total Time: 40–50 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

1 tablespoon extra virgin olive oil for sautΓ©ing vegetables and enhancing flavor

1 large sweet onion, chopped

1 red bell pepper, seeded and chopped

2 cups sliced carrots

4 cloves garlic, minced or grated

1 1/4 pounds boneless, skinless chicken breasts or thighs

9 cups low sodium chicken broth or stock

8.8 ounces three-cheese tortellini pasta

1/4 to 1/3 cup heavy cream or half and half

2 tablespoons packed frozen spinach or 1/2 cup fresh baby spinach leaves

2 tablespoons fresh parsley, chopped

1 1/2 teaspoons dried thyme leaves or 1 tablespoon fresh thyme leaves

1/2 teaspoon crushed red pepper flakes

Salt and freshly ground black pepper to taste

Instructions

1-First Step: Prepare Ingredients Shred cooked chicken breast, finely chop the onion and garlic, and measure out broth, seasoning, and tortellini to ensure smooth cooking flow.

2-Second Step: SautΓ© Aromatics Heat 1 tablespoon olive oil in a large pot over medium heat. Add chopped onion and cook until softened and translucent, about 3 minutes. Stir in red bell pepper, carrots, and minced garlic and sautΓ© for another 3 minutes to combine flavors.

3-Third Step: Add Broth and Simmer Pour in 9 cups of low sodium chicken broth. Add dried thyme, crushed red pepper flakes, salt, and black pepper. Bring to a boil, then reduce heat to a simmer and cook for 15 minutes to allow flavors to meld.

4-Fourth Step: Cook Tortellini and Add Chicken With the broth simmering, gently stir in the tortellini to prevent sticking. Chop or shred the cooked chicken and return it to the pot. Continue simmering for 10 to 14 minutes until tortellini is tender and cooked through.

5-Fifth Step: Add Cream and Greens Turn off the heat and stir in heavy cream (or dairy-free substitute), spinach, and fresh parsley. Adjust seasoning with salt and pepper to taste for a perfectly balanced, creamy, and vibrant soup.

6-Final Step: Serve and Garnish Ladle the zesty chicken tortellini soup into bowls. Garnish with additional fresh herbs or grated cheese if desired. Serve hot to enjoy a comforting yet tangy and herbaceous bowl of goodness.

Notes

πŸ•’ Substitute rotisserie chicken, shredded turkey, or diced ham for quicker preparation. For a vegetarian option, use chickpeas or white beans instead of meat.
🌢️ For a smoky and slightly spicy twist, roasted Hatch chiles can be added; roast and peel them before blending into the broth or adding directly for extra flavor.
πŸ₯„ Garnish with freshly grated Parmesan or mozzarella for a richer cheese finish.
