1 sleeve buttery crackers, crushed for creating a crispy finish

Instructions

1-Preheat your oven: Preheating your oven to 350°F (175°C) and gathering your ingredients for smooth sailing.

2-Cook the vegetables: In a medium skillet, melt 2 tablespoons of butter over medium-low heat, then add the sliced yellow squash and chopped onion. Cook them until they’re tender, which brings out their natural flavors.

3-Prepare the egg mixture: In a large bowl, lightly whisk the 2 large eggs, then mix in 1 cup grated cheddar cheese and 1 cup milk until everything is well combined.

4-Mix all ingredients: Stir in the cooked squash and onions, followed by the remaining 2 tablespoons of melted butter. Add the optional ¼ teaspoon cayenne pepper, ½ teaspoon salt, and ½ teaspoon ground black pepper for seasoning.

5-Bake the casserole: Pour the mixture into a greased 9×13 casserole dish, top it evenly with the crushed buttery crackers, and bake for 45 minutes until the top is lightly browned and the center is set without any jiggle.
