Ingredients

– 1 1/4 cup all-purpose flour

– 1/2 cup unsalted butter at room temperature

– 3/4 cup white chocolate chips

– 1/2 cup crushed candy canes plus more for dipping

– 1 pinch salt

– 1/4 teaspoon baking soda

– 1 pinch baking powder

– 1 egg at room temperature

– 1/2 cup sugar plus 1 tablespoon

– 1/2 teaspoon vanilla extract

– 1/4 teaspoon peppermint oil

Instructions

1- Whisk together the flour, salt, baking soda, and baking powder in a bowl, then set it aside for later.

2- Cream the butter and sugar in a mixer with a paddle attachment until it’s light and fluffy; this usually takes a couple of minutes.

3- Add the egg while mixing, followed by the vanilla extract and peppermint oil, to blend everything smoothly.

4- Gradually mix in the dry ingredients just until combined, so you don’t overwork the dough.

5- Fold in the white chocolate chips and 1/2 cup of crushed candy canes by hand or on low speed for even distribution.

6- Chill the dough in a plastic bag for at least 20 minutes to make it easier to shape.

7- Scoop about 1 1/2 tablespoons of dough, roll it into balls, and dip each one into crushed candy canes, pressing gently to coat.

8- Place the balls on your prepared baking sheet with the peppermint side up, and chill them on the sheet for 5-10 minutes in the fridge.

9- Bake at 350 degrees Fahrenheit for 6 to 7 minutes until the edges set but the centers stay soft.

10- Let the cookies cool on the baking sheet until they’re firm enough to handle, then enjoy the fresh, festive taste.
