Ingredients
700g potato, cut into 2 cm pieces
3 tbsp vegetable oil or coconut oil
1.5 tsp mustard seeds
1 tsp cumin seeds
1 tsp fennel seeds (optional)
15 fresh curry leaves
1 tbsp garlic, finely grated
1 tbsp ginger, finely grated
1 medium onion, finely chopped
1/2 tsp turmeric powder
2 tsp curry powder
1/2 tsp chili powder
1 tbsp tomato paste
1 zucchini, chopped
1 carrot, chopped
1/2 small cauliflower, broken into florets
1 tsp salt
1/2 tsp black pepper
2 cups water
1 cup frozen green peas, thawed
2 tbsp chopped cilantro
2 tbsp mint
1/4 cup parsley
2 tbsp cashews (optional)
1 tsp lemon juice
1 1/4 cups cooked chickpeas
2 sheets puff pastry
1 egg, lightly whisked (optional)
Instructions
1. Boil potatoes in water for 12–15 minutes until very soft, then drain and mash.
2. Heat oil in a pot, add mustard, cumin, and fennel seeds. Cook until seeds pop.
3. Stir in curry leaves, garlic, ginger, and onion. Cook until onion is golden.
4. Add tomato paste, turmeric, curry powder, chili powder, and spices. Stir to bloom flavors.
5. Add zucchini, carrot, cauliflower, salt, pepper, and water. Simmer until vegetables are tender.
6. Remove from heat; stir in peas, mashed potatoes, herbs, cashews, chickpeas, lemon juice, and spices. Adjust seasoning.
7. Preheat oven to 350°F for puff pastry or 425°F for pie crust.
8. Line pie dish with pastry, fill with vegetable mixture, cover with pastry.
9. Crimp edges, cut vent slits, brush with egg wash.
10. Bake for 50–60 minutes until golden. Let stand before serving.
