Ingredients

– 8 pounds pears (peeled, cored, coarsely chopped)

– 1/3 cup water

– Zest and juice of 1 lemon

– 4 cups granulated sugar

– 1 1/2 teaspoons vanilla extract

– 1 to 2 teaspoons cinnamon

– 3/4 teaspoon cardamom

– 3/4 teaspoon nutmeg

– Juice of 1 orange

Instructions

1-In a large stainless steel saucepan, combine the pears, water, lemon zest, and lemon juice.

2-Bring to a boil over medium-high heat. Reduce heat and simmer gently, stirring occasionally, for about 20 minutes until pears soften.

3-Puree the mixture in batches using a food processor or immersion blender until smooth but not liquefied.

4-Measure 8 cups of the pear puree; save any extra for other uses.

5-In a clean large stainless steel saucepan, combine the 8 cups pear puree, sugar, orange juice, vanilla, cinnamon, cardamom, and nutmeg. Stir until the sugar dissolves.

6-Bring to a boil over medium-high heat, stirring frequently. Reduce heat and simmer gently for 6 to 8 hours, stirring often, until the mixture thickens, holds its shape on a spoon, and no liquid separates.

7-For Canning: Ladle the hot pear butter into sterilized jars, leaving 1/4 inch headspace. Remove air bubbles, wipe rims, place lids and bands on jars. Process jars in a boiling water bath for 10 minutes. Let jars cool for 5 minutes before removing.
