1/4 cup granulated sugar

16 ounces cream cheese

1/2 cup sugar

1 teaspoon vanilla extract

1 large egg

2 egg yolks

1/2 cup sour cream

1/3 cup superfine sugar for topping

Instructions

1-Preheat the oven to 275 degrees Fahrenheit and line a muffin tin with liners to get everything ready.

2-Mix the crushed graham crackers, sugar, and melted butter; press the mixture evenly into the liners to form the crust.

3-In a separate bowl, beat the cream cheese and sugar until smooth for that creamy base.

4-Add the vanilla extract, egg, egg yolks, sour cream, and salt; blend until everything is creamy and well combined.

5-Fill the liners about three-quarters full with the batter, making sure not to overfill.

6-Bake for 22 to 25 minutes, or until the filling is set. Let the cupcakes cool completely in the tin.
