Ingredients

– 1 tablespoon olive oil

– 3/4 cup onion, diced

– 1 pound 95% lean ground turkey

– 2 cloves garlic, minced

– 1 tablespoon chili powder (preferably 2 teaspoons regular chili powder and 1 teaspoon ancho chili powder)

– 1 teaspoon cumin

– 1/2 teaspoon paprika

– 1/2 cup tomato sauce

– 1/2 cup chicken broth

– Romaine or iceberg lettuce leaves, doubled up, for serving

– Shredded Mexican cheese for topping

– Diced Roma tomatoes for topping

– Diced red onion for topping

– Diced avocado for topping

– Chopped cilantro for topping

– Light sour cream for topping

Instructions

1-First, heat 1 tablespoon olive oil in a non-stick skillet over medium-high heat. This gets the base going with that nice, savory flavor right away.

2-Then, add 3/4 cup diced onion and sauté for 2 minutes until it’s soft and fragrant.

3-Next, toss in 1 pound of 95% lean ground turkey and 2 cloves minced garlic. Season with a bit of salt and pepper, and cook while breaking up the turkey for about 5 minutes until it’s fully cooked through. Now, stir in 1 tablespoon chili powder (using 2 teaspoons regular and 1 teaspoon ancho for that extra kick), 1 teaspoon cumin, 1/2 teaspoon paprika, 1/2 cup tomato sauce, and 1/2 cup chicken broth.

4-Reduce the heat to a simmer and let it cook for about 5 more minutes until the sauce thickens up nicely.

5-Finally, serve the turkey mixture in doubled-up Romaine or iceberg lettuce leaves, and top with shredded Mexican cheese, diced Roma tomatoes, diced red onion, diced avocado, chopped cilantro, or light sour cream-whatever you like!
