Ingredients

– 1 teaspoon olive oil

– 1/2 diced onion (white, yellow, or sweet)

– 3 minced garlic cloves

– 1 cup sliced carrots

– 1 cup sliced celery (1-inch pieces)

– 6 cups chicken or turkey broth

– 16 ounces (about 454 grams) drained diced tomatoes

– 2 red potatoes cubed into 1-inch pieces

– 2 sprigs of fresh thyme or dried thyme

– 1 bay leaf

– 1/4 cup all-purpose flour for thickening

– 1/2 to 1 teaspoon chicken bouillon

– 4 cups cooked turkey (diced or shredded)

– Salt to taste

– Black pepper to taste

– Parsley for garnish (if desired)

Instructions

1-First, heat the olive oil in a large pot over medium heat and sauté the diced onion and minced garlic until they turn golden, about 2-3 minutes. This step creates a flavorful base that ties everything together.

2-Next, add the sliced carrots and celery, giving them a brief sauté for another 2 minutes to enhance their natural sweetness and texture.

3-Then, pour in the 6 cups of chicken or turkey broth, along with the drained diced tomatoes, cubed red potatoes, thyme, and bay leaf. Bring the mixture to a simmer and cook until the potatoes soften, roughly 10 minutes.

4-At this point, remove about 1 cup of the broth to dissolve the 1/4 cup of all-purpose flour, then stir it back into the pot to thicken the stew nicely.

5-Finally, add the 4 cups of cooked turkey, stirring gently to avoid drying it out, and season with salt and black pepper to taste. Simmer for another 5 minutes, then garnish with parsley if you like, and serve hot.
