Instructions
1-First, heat the olive oil in a large pot over medium heat and sauté the diced onion and minced garlic until they turn golden, about 2-3 minutes. This step creates a flavorful base that ties everything together.
2-Next, add the sliced carrots and celery, giving them a brief sauté for another 2 minutes to enhance their natural sweetness and texture.
3-Then, pour in the 6 cups of chicken or turkey broth, along with the drained diced tomatoes, cubed red potatoes, thyme, and bay leaf. Bring the mixture to a simmer and cook until the potatoes soften, roughly 10 minutes.
4-At this point, remove about 1 cup of the broth to dissolve the 1/4 cup of all-purpose flour, then stir it back into the pot to thicken the stew nicely.
5-Finally, add the 4 cups of cooked turkey, stirring gently to avoid drying it out, and season with salt and black pepper to taste. Simmer for another 5 minutes, then garnish with parsley if you like, and serve hot.
