Instructions
-First, prepare the tomatoes by cutting each of the 6 large heirloom tomatoes into 8 wedges, being careful not to slice all the way through the bottom so they hold together.
-In a large bowl, mix together the 2 cups of plain Greek yogurt, 4 tablespoons of Dijon mustard, 2 teaspoons of red pepper chili flakes, and salt and pepper to taste. Stir until everything blends into a creamy dressing.
-Next, add the 1 shredded rotisserie chicken, 1 cup dried cranberries, 1 (16-ounce) can of drained and rinsed garbanzo beans, 1/4 cup pine nuts, 2 diced stalks of celery, and 2 diced stalks of green onions to the bowl. Toss gently to coat all ingredients evenly with the dressing.
-Scoop the mixed salad into the prepared tomato wedges, filling each one carefully to keep its shape.
-Garnish with fresh curly parsley, then chill in the fridge for at least 30 minutes to let the flavors meld. This dish can be made ahead, stored in the fridge, and served on a bed of lettuce or as a sandwich filling for extra versatility.
