1 lemon, juiced

ΒΌ cup olive oil

Instructions

1-Wash and dry the cherry tomatoes and peaches thoroughly. Slice the peaches into thin wedges and cut the cherry tomatoes in halves.

2-Slice the fresh mozzarella into even rounds, ensuring they are about the same size as the peach slices for consistency.

3-Combine the salad ingredients ΒΌ cup red onion (sliced), 4 ripe peaches or nectarines (pitted and sliced), 3 cups heirloom cherry tomatoes (halved), and 1 cup baby mozzarella balls (halved) on a large serving platter.

4-Top with baby basil leaves.

5-Season the salad with salt and black pepper to taste.

6-In a separate bowl, whisk together the dressing ingredients: 2 tablespoons red wine vinegar, juice from 1 lemon, ΒΌ cup olive oil, and salt and freshly cracked black pepper to taste.

7-Drizzle the dressing over the salad.
