2-Prepare the vegetables: First, remove the husks from 9 medium tomatillos, rinse them thoroughly, and pat them dry to get rid of any sticky residue. Arrange the tomatillos, 1 small onion cut into chunks, and 1 to 2 serrano or jalapeño peppers on the baking sheet. Drizzle everything with a bit of avocado oil, sprinkle with sea salt, and toss to coat evenly for that perfect roast.
