Ingredients
2 tablespoons unsalted butter
2 cloves garlic, minced
2 cups fresh or thawed frozen corn kernels
1/3 cup chopped fresh cilantro
1/3 cup chopped green onions
1 teaspoon kosher salt, plus additional to taste
1/2 teaspoon black pepper, plus additional to taste
1/2 teaspoon ground cumin
Pinch of cayenne pepper
1 large egg, beaten
3/4 to 1 cup all-purpose flour
1 teaspoon baking powder
2 tablespoons diced pickled jalapeño
1 tablespoon jalapeño pickle juice or fresh lime juice
1/4 cup shredded mild cheddar cheese
Oil with a high smoke point for frying (such as safflower, vegetable, or canola oil)
Optional: 1 tablespoon bacon grease for additional flavor when frying
Instructions
1. Melt the butter in a large skillet over medium-low heat. Add minced garlic and cook until fragrant, about 1-2 minutes.
2. Add corn kernels and cook until softened and slightly golden, about 3-5 minutes. Remove from heat and stir in cilantro, green onions, salt, black pepper, cumin, and cayenne pepper. Set aside to cool.
3. In a mixing bowl, whisk together beaten egg, flour, baking powder, diced jalapeños, pickle juice or lime juice, and cheddar cheese. Fold in the corn mixture until combined.
4. Clean the skillet and heat the oil over medium-high heat to 350°F. Add bacon grease if using.
5. Spoon batter by tablespoonfuls into the hot oil. Flatten each slightly with a spoon. Fry for about 3-4 minutes per side until golden brown.
6. Drain fritters on paper towels. Serve warm with dipping sauces such as chipotle honey aioli or spicy Sriracha ranch.
