Ingredients

1 whole chicken (about 4 pounds)
4 tablespoons unsalted butter, softened
1/4 cup gochujang
2 tablespoons miso paste
2 to 3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1 to 2 tablespoons honey
1 tablespoon soy sauce
1/2 teaspoon salt
Freshly ground black pepper
Optional fresh herbs (thyme or rosemary)

Instructions

1. Preheat oven to 425°F (220°C) and prepare a baking sheet with a wire rack.
2. Mix softened butter with miso, gochujang, garlic, ginger, honey, and soy sauce to make the compound butter.
3. Clean and pat the chicken dry. Optionally spatchcock it by removing the backbone and flattening.
4. Rub the compound butter generously under the skin directly onto the meat and all over the chicken.
5. Season the chicken with salt and pepper. Optionally, stuff the cavity with fresh herbs.
6. Place the chicken on the prepared rack and roast for 45 minutes to 1 hour until a thermometer reads at least 175°F in the thickest part of the thigh.
7. Baste periodically with pan juices for additional flavor and moisture.
8. Let the chicken rest for 10 minutes before carving to allow juices to redistribute.
