Ingredients

– 1 tube (16.5 ounces) ready-to-bake sugar cookie dough

– 5 tablespoons sprinkles, divided

– 2 packages (8 ounces each) cream cheese, softened to room temperature

– ΒΌ cup plus 2 tablespoons granulated sugar

– 2 eggs, room temperature

– 1 teaspoon vanilla extract

– Β½ teaspoon kosher salt

– Whipped cream for serving

Instructions

1-Preheat oven to 375Β°F (190Β°C). Line a 9Γ—9-inch (23Γ—23 cm) baking pan with parchment paper, leaving a 2-inch (5 cm) overhang on two opposite sides for easy removal. Lightly coat the pan with baking spray.

2-Crumble the cookie dough into small pieces and spread evenly across the bottom of the prepared pan. Sprinkle about 2 tablespoons of sprinkles over the dough and gently press to adhere.

3-Bake the crust for approximately 20 minutes or until it is lightly golden. Remove and cool completely on a wire rack.

4-Lower oven temperature to 325Β°F (163Β°C). In a large bowl, beat the softened cream cheese and sugar with an electric mixer until smooth and creamy, about 1 minute. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract and kosher salt until just combined.

5-Pour the cheesecake mixture evenly over the cooled crust.

6-Bake for 35 to 40 minutes or until the center is slightly set and the edges are firm. Allow to cool completely, then cover and refrigerate for at least 3 hours until well chilled.

7-Use the parchment paper overhang to lift the cheesecake from the pan onto a cutting board. Top with whipped cream and the remaining sprinkles. Cut into squares and serve.
