Ingredients

– 4 thin slices of beef (preferably top sirloin, top round steak, flank steak, or skirt steak)

– 6½ ounces ground pork (ground sausage can be used as an alternative)

– ½ teaspoon oregano

– ¼ teaspoon salt

– 4 sprigs fresh rosemary

– 4 slices bacon (or 8 slices if bacon strips are short)

– 1-2 tablespoons olive oil

Instructions

1: In a medium bowl, combine 6½ ounces of ground pork with ½ teaspoon oregano and ¼ teaspoon salt. Mix it well to blend the flavors evenly.

2: On a flat surface, place one slice of beef, spread ¼ of the pork mixture on it, fold the sides over, and roll it lengthwise into a neat bundle.

3: Wrap the beef roll with 1 or 2 slices of bacon and secure it with butcher’s twine, adding one sprig of fresh rosemary between the beef and the string for extra aroma.

4: Drizzle 1-2 tablespoons of olive oil over the rolls and sprinkle with a little salt to enhance the taste before cooking.

5: Grill the beef rolls over high heat, around 400-450°F, turning them frequently until they’re cooked through and juicy.

6: Remove from the grill when the internal temperature reaches 160-165°F, let them rest for 3 minutes, take off the string, then slice and serve. Feel free to add freshly ground black pepper for an extra kick at the end.
