1 small box (3 oz) instant strawberry gelatin powder (raspberry or cherry can be used as alternatives)
1 cup hot water
1 cup cold water
8 oz (about 225 g) block cream cheese, softened
1 tsp vanilla extract
½ cup (60 g) powdered sugar (confectioners’ sugar)
2 cups (approx. 480 ml) whipped topping or homemade whipped cream
2 pints (about 4 cups, 600 g) sliced fresh strawberries
Optional: 1½ to 3 cups (about 1 to 2 cans, 21 oz each) strawberry pie filling for layering

Instructions

1. Preheat the oven according to cake mix package instructions. Grease a 9×13-inch pan.
2. Prepare and bake the cake mix as per package instructions for 20-25 minutes, or until a toothpick comes out clean.
3. Cool the cake to a warm or room temperature.
4. Poke holes about 1 inch apart over the surface of the cake using the end of a wooden spoon or fork.
5. Dissolve the strawberry gelatin in 1 cup hot water, then add 1 cup cold water. Pour evenly over the cake.
6. Refrigerate the cake for at least 1 hour or until the gelatin sets.
7. Beat softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in whipped topping.
8. Spread the frosting over the gelatin-set cake.
9. Top with sliced fresh strawberries before serving. Optionally, layer with strawberry pie filling or use a crunchy topping.
