Ingredients

– 400g crushed Golden Oreos

– 20g freeze-dried strawberries

– 114g melted butter (warm, not hot)

– 460g full-fat cream cheese (33%+ fat)

– 150g heavy cream (minimum 36% fat)

– 60g sifted powdered sugar

– 1 teaspoon vanilla extract

– 230g full-fat cream cheese

– 230g heavy cream

– 150g mascarpone (41% fat)

– 120g sifted powdered sugar

– 250g strawberry reduction (jam-like texture, no pulp)

– 460g heavy cream

– 150g mascarpone

– 60g sifted powdered sugar

Instructions

1-Start with the crust. Crush 400g Golden Oreos into fine crumbs, mix with 20g crushed freeze-dried strawberries, 114g warm melted butter, and a pinch of salt until evenly coated. Press firmly into the pan bottom. Refrigerate while preparing layers.

2-Make the cheesecake layer. In a chilled bowl, whip 460g cold full-fat cream cheese (33%+ fat), 150g cold heavy cream (36%+ fat), 60g sifted powdered sugar, and 1 tsp vanilla extract until light and fluffy. Spread evenly over crust. Refrigerate 15-20 minutes to set.

3-Prepare the strawberry cheesecake layer. Whip 230g cold full-fat cream cheese, 230g cold heavy cream, 150g mascarpone (41% fat), and 120g sifted powdered sugar until fluffy. Gradually fold in 250g strawberry reduction (jam-like, no pulp) for pink hue and flavor. Spread over first layer. Refrigerate another 15 minutes.

4-Craft the whipped Chantilly cream. Whip 460g cold heavy cream, 150g mascarpone, and 60g sifted powdered sugar to stiff peaks. Spread or pipe over strawberry layer for a cloud-like top.

5-Chill the full strawberry lasagna at least four hours or overnight. For neat slices, freeze 30 minutes before cutting. Garnish with fresh sliced strawberries and extra freeze-dried ones.
