– 2 pounds skirt, flank, sirloin, or hanger steak, sliced into 1/2 inch strips
– 1 red pepper, deseeded and sliced into thin strips
– 1 bell pepper, deseeded and sliced into thin strips
– 1 medium onion, peeled and sliced into thin strips
– 3 tablespoons olive oil
– 1 tablespoon lime juice
– 1/2 teaspoon chili powder
– 1 teaspoon ground cumin
– Pinch cayenne pepper
– 1/2 teaspoon salt
– 1/2 teaspoon ground black pepper
– 2 cloves garlic, minced
– 6-8 tortillas, warmed
– Sour cream for optional garnish

Instructions
1-First, place the steak in one sealable bag and the peppers and onion in another. This keeps flavors separate until it’s time to combine them.
2-Next, combine 3 tablespoons olive oil, 1 tablespoon lime juice, 1/2 teaspoon chili powder, 1 teaspoon ground cumin, a pinch of cayenne pepper, 1/2 teaspoon salt, 1/2 teaspoon ground black pepper, and 2 cloves garlic (minced) in a jar, shaking until well mixed.
3-Pour one third of the marinade over the steak, one third over the vegetables, and reserve the rest. Seal the bags and refrigerate for one hour to overnight for deeper flavors.
4-When ready, heat a large skillet over medium-high heat and cook the vegetables until just tender-crisp, about 5 minutes, then remove them.
5-Add the steak strips to the skillet and cook until fully done, about 7-10 minutes. Return the vegetables and reserved marinade to the skillet, cooking briefly to blend everything together.
6-Finally, serve with warm tortillas and any optional garnishes for a complete, tasty dish.
