Ingredients

6 cups baby spinach
1 cup strawberries, halved or sliced
1/2 cup raspberries
1/2 cup blueberries
1/3 to 1/2 cup toasted pecans, roughly chopped
1/3 to 1/2 cup crumbled goat cheese, or feta/blue cheese
1/3 cup red onion, thinly sliced (optional)
For Raspberry Vinaigrette:
3 tablespoons raspberry vinegar
6 tablespoons vegetable oil or olive oil
3 tablespoons honey
1 teaspoon Dijon mustard
2 tablespoons finely minced shallots
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
For Honey Balsamic Vinaigrette:
1/4 cup honey balsamic vinegar, or balsamic vinegar plus 1 tablespoon honey
1 garlic clove, minced
Olive oil (about 6 tablespoons)

Instructions

1. Toast the pecans in a skillet over medium-low heat until golden and fragrant, then let them cool.
2. In a large mixing bowl, combine the baby spinach, strawberries, raspberries, blueberries, red onion (if using), and pecans.
3. In a separate bowl, whisk together your choice of dressing ingredients until emulsified, or shake in a sealed container.
4. Drizzle the dressing over the mixed salad ingredients just before serving and gently toss to coat.
5. Sprinkle the crumbled goat cheese on top after tossing to maintain its texture and appearance.
