Simple and Flavorful Spatchcock (Butterflied) Roast Chicken Recipe

Ingredients

1 whole chicken (4 to 5 pounds / 1.8 to 2.3 kg)
1 to 2 tablespoons olive oil (or avocado oil)
1 to teaspoons kosher or sea salt
1 teaspoon garlic powder (optional)
1 teaspoon onion powder (optional)
½ to 1 teaspoon paprika (sweet, hot, or smoked)
½ teaspoon chili powder or cayenne (optional)
1 teaspoon fresh thyme leaves or other herbs (optional)
Juice of 1 lemon (optional)
1 tablespoon Dijon mustard (optional)
1 to 2 heads garlic, halved horizontally (optional)
2 large lemons, sliced thick (optional)
1 tablespoon unsalted butter, divided into pieces (optional)

Instructions

1. Preheat the oven to 425ºF to 450ºF (220ºC to 230ºC) and position an oven rack in the middle.
2. Arrange sliced lemons and garlic halves on a baking sheet or roasting pan. Place a wire rack on top.
3. Using kitchen shears or a sharp knife, remove the backbone from the chicken. Save it for stock.
4. Flip the chicken breast-side up and press down the breastbone to flatten.
5. Pat the chicken dry with paper towels.
6. Mix salt, garlic powder, onion powder, paprika, chili powder, and herbs. Rub two-thirds under the chicken skin.
7. Combine Dijon mustard, lemon juice, and olive oil. Massage onto the chicken.
8. Rub remaining spice mix over the chicken skin and brush with olive oil.
9. Tuck wing tips behind shoulders and arrange legs so the chicken stays flat.
10. Optionally, place butter pieces on top.
11. Let the chicken rest while the oven preheats for 20 to 30 minutes.
12. Roast at 450ºF (230ºC) for 15 to 20 minutes. Reduce to 400ºF (200ºC) and roast 40 to 50 minutes more.
13. Allow the chicken to rest for 10 to 15 minutes before carving.
