Ingredients
– 12 oz bag frozen raspberries, thawed or 12 oz fresh raspberries
– 1/4 cup granulated sugar
– 12 oz can frozen lemonade concentrate, thawed
– 1 cup lemon juice (from about 6 medium lemons) combined with 3/4 cup sugar
– 2 litres club soda, chilled
– Fresh ice for serving
– Fresh raspberries and lemon slices for garnish (optional)
Instructions
1-In a blender, puree together the thawed lemonade concentrate (or the fresh lemon juice and sugar mixture), 1/4 cup sugar, and thawed raspberries until smooth.
2-Strain the mixture through a sieve to remove seeds, pressing to get all the good syrup out it’s optional, but it makes for a smoother drink.
3-Just before serving, slowly mix the raspberry lemonade syrup with the chilled club soda to keep the bubbles lively.
4-Garnish with fresh raspberries and lemon slices if you want to make it look extra pretty.
5-For individual glasses, fill with ice, add about 1/3 cup of the syrup, then gently pour in 1 cup of club soda and garnish.
