Ingredients
1 can (14.75 oz / about 418 g) pink salmon, drained
1/4 cup finely chopped onion
1/4 cup yellow cornmeal
1/4 cup all-purpose flour or almond flour
1 large egg
3 tablespoons mayonnaise
1/4 teaspoon chili powder or Creole/Old Bay seasoning
1/2 tablespoon olive oil or vegetable oil for frying
Salt and pepper to taste
Optional: 1/2 tablespoon Worcestershire sauce, juice from 1/2 lemon, finely chopped celery or red bell pepper, green onions or fresh herbs (parsley or cilantro)
Instructions
1. Open the salmon can, drain thoroughly, and remove skin and bones if preferred. Flake the salmon with a fork in a bowl.
2. Add chopped onion, cornmeal, flour, mayonnaise, seasoning, Worcestershire sauce and lemon juice if desired, egg, salt, and pepper. Mix until well combined.
3. If mixture is too crumbly, add a bit of the salmon juice back for binding. Refrigerate patties for at least one hour.
4. Shape mixture into small burger-sized patties. Option to add finely chopped vegetables or aromatics for extra flavor.
5. Heat oil in a skillet over medium heat. Fry patties for about 5 minutes per side until golden brown. Drain on paper towels.
Alternative Methods:
– Bake on a preheated sheet at 375–400°F for 10-20 minutes, flipping halfway.
– Air fry at 400°F for about 8 minutes, spray with oil halfway through.
