Ingredients
Two 10-ounce bags (566g; 11 heaping cups) miniature marshmallows, divided
1/2 cup (8 Tbsp; 113g) unsalted butter
1 teaspoon pure vanilla extract
Pinch of salt (a little less than 1/8 teaspoon)
7 cups (190g) crispy rice cereal
1 and 1/2 cups graham crackers, broken into small pieces (6 graham crackers; 90g)
3 milk chocolate bars, broken into pieces (1 heaping cup; 129g)
1 2 milk chocolate bars, melted for optional topping
Instructions
1-Preheat your ovenβs broiler on high for about 5 minutes to get ready for toasting.
2-Toast half the marshmallows by spreading one 10-ounce bag in a single layer on an aluminum foil-lined baking sheet sprayed lightly with nonstick cooking spray. Broil on the center rack until they turn golden brown, but watch closely to avoid burning.
3-Line a 9Γ13-inch pan with parchment paper and lightly grease it for easy removal later.
4-Melt the butter in a very large pot over medium heat, then add the remaining non-toasted marshmallows and stir until they melt completely.
5-Remove from heat, stir in the vanilla extract and a pinch of salt, then fold in the crispy rice cereal and graham cracker pieces until mostly combined.
6-Let the mixture cool for 1-2 minutes, then fold in the toasted marshmallows and chocolate pieces, keeping the chunks intact for that perfect texture.
7-Transfer the mixture to the prepared pan and gently spread it evenly. Lightly press down with the back of a greased spatula or wax paper, but donβt pack it too tight to keep it airy.
8-Allow the treats to set for at least 1 hour at room temperature, or cover and leave up to 1 day.
9-Optional: Drizzle melted chocolate over the top and refrigerate for 15-20 minutes to set before cutting into squares.
