Ingredients

– 1 egg, separated

– 75g flour

– 1 tbsp sugar

– 100ml milk

– 1 tbsp neutral-tasting oil

– 250g minced beef

– 2 slices processed cheese or mild cheddar

– 30ml burger sauce

– 40g sliced gherkins

Instructions

1-First, beat the egg white to soft peaks using an electric whisk, then mix the egg yolk with flour, baking powder, and sugar in a separate bowl.

2-Gradually whisk in milk to form a smooth batter, and gently fold in the whipped egg white for extra fluffiness.

3-Heat half the oil in a non-stick pan over medium heat, add a quarter of the batter, and cook for 2-3 minutes per side until golden; repeat for four pancakes and keep them warm.

4-For the patties, divide 250g minced beef into two portions, shape them, and season with salt and pepper.

5-Increase heat to high, add the remaining oil, place a patty in the pan, cover with baking parchment, press it thin, and cook for 2-3 minutes until browned.

6-Flip the patty, press again, add cheese, cover, and cook for 1 more minute until the cheese melts; repeat for the second patty.

7-To assemble, spread 30ml burger sauce on two pancakes, add the patties and 40g sliced gherkins, then top with the remaining pancakes.
