Ingredients
3 pound chuck roast
2 cups BBQ sauce
1 pound bacon, cooked and crumbled
Half an onion, sliced (preferably sweet onion)
2 tablespoons Worcestershire sauce
3 cloves garlic, minced (fresh or jarred)
¼ cup brown sugar
4 ounce can diced jalapenos (can substitute with green chiles, bell peppers, or pepperoncini peppers for milder flavor)
Sliced Colby Jack cheese (or sharp cheddar, provolone, pepperjack)
Buns (brioche buns, sub rolls, hoagie rolls, onion kaiser rolls, or any crusty rolls)
Crispy fried onions
Instructions
1-Gather and Prep Ingredients: First, trim excess fat from your 3 pound chuck roast and slice half an onion aim for a sweet variety for the best taste. Mince 3 cloves of garlic and measure out 2 cups of BBQ sauce, along with 2 tablespoons of Worcestershire sauce and ¼ cup brown sugar. If you want to amp up the heat, open that 4 ounce can of diced jalapenos. Prep time is about 5 minutes, so it’s super quick!
2-Assemble in the Slow Cooker: Next, place the chuck roast, 2 cups BBQ sauce, half of the 1 pound cooked and crumbled bacon, sliced onion, 2 tablespoons Worcestershire sauce, minced garlic, ¼ cup brown sugar, and half of the diced jalapenos into your slow cooker. Stir everything gently to mix. Set it to cook on low for 6-8 hours or high for 4-6 hours your kitchen will smell amazing!
3-Cook and Shred the Beef: Once the meat is tender and shreds easily with a fork, remove it from the slow cooker. Use two forks to shred the beef right on a cutting board. Drain most of the liquid to keep things from getting too messy, but save a bit for moisture if needed. For variations, you can swap in pork roast or chicken, just adjust the cooking time accordingly.
4-Assemble the Sandwiches: Now for the fun part pile the shredded beef mixture onto your buns! Add the remaining bacon, sliced cheese, jalapenos, and crispy fried onions on top. This step lets you customize each sandwich to your liking. Total time is around 8 hours and 5 minutes, but most of that is hands-off cooking.
5-Serve and Store: Serve these sandwiches hot and enjoy the burst of flavors! For leftovers, store in an airtight container in the fridge for up to 3 days. If you’re looking for more slow cooker ideas, check out our guide to slow cooker BBQ pulled pork for another crowd-pleaser.
