– 3 cloves garlic, minced

– 1 bell pepper, cored and finely chopped

– 1/2 cup finely chopped yellow onion

– 1/2 cup hoisin sauce

– 2 tablespoons soy sauce

– 1 can (8 ounces) sliced water chestnuts, drained and rinsed

– 1 1/2 cups cooked white or brown rice

– 3 green onions, sliced

– 1 tablespoon rice vinegar (optional)

– 1 1/2 teaspoons sesame oil (optional)

– 2 heads iceberg lettuce

Instructions

1-First, gather all your ingredients and get them ready this makes everything smoother. Place the 2 pounds of ground chicken breast and 3 minced garlic cloves in a large microwave-safe bowl. Microwave the mixture, stirring now and then, until the chicken is no longer pink, which takes about 5 to 6 minutes. Once done, drain any liquid and move it to a 5 to 7 quart slow cooker for the next stage.

2-Next, add the finely chopped bell pepper, 1/2 cup of finely chopped yellow onion, 1/2 cup hoisin sauce, and 2 tablespoons soy sauce into the slow cooker. Don’t forget to toss in 1/2 teaspoon salt and 1/2 teaspoon pepper for seasoning. Mix everything well, cover the slow cooker, and set it to low heat for 2 to 3 hours until the chicken becomes tender and full of flavor.

3-After the initial cooking time, stir in the drained and rinsed 8-ounce can of sliced water chestnuts, 1 1/2 cups of cooked white or brown rice, 3 sliced green onions, 1 tablespoon rice vinegar if you’re using it, and 1 1/2 teaspoons sesame oil for extra taste. Let it cook for another 3 to 5 minutes until everything is heated through, then adjust the salt as needed to suit your preference.

4-For serving, separate the leaves from the 2 heads of iceberg lettuce and spoon the chicken mixture into each leaf to make your wraps. This part is where the magic happens, turning your slow cooker Asian chicken lettuce wraps into a handheld meal that’s perfect for gatherings.
