– 1 to 2 cups shredded melting cheese

– Vegan cheese substitutes

– 6 to 8 medium flour tortillas

– Corn tortillas for gluten-free

Instructions

1-First, prepare all ingredients by peeling and deveining the 1 pound of uncooked medium shrimp, chopping the 1/2 cup onion and 1/2 cup bell pepper, and mincing the 2 cloves of garlic.

2-Second, heat 1 tablespoon of olive oil in a skillet over medium heat, then sauté the onion, bell pepper, and garlic until tender, about 2-3 minutes.

3-Third, add the shrimp and seasoning to the skillet, stirring in the 2 tablespoons of taco seasoning or the homemade blend, and cook until the shrimp turn pink, which takes just 3-4 minutes.

4-Fourth, remove the shrimp mixture from the pan, clean it, and lightly grease it for the next step.

5-Fifth, place a tortilla in the pan, sprinkle cheese on one side, add 5 to 6 shrimp from the mixture, top with more cheese, and fold the tortilla in half.

6-Finally, cook each side for 2 to 3 minutes until golden and crispy, then repeat with the remaining tortillas.
