– 2 pounds large jumbo shrimp, peeled and deveined, tails on

– 1 pound smoked sausage (kielbasa or andouille), cut into 1-inch pieces

– 4 ears corn, each cut into 4 pieces

– 1 pound small red potatoes, cut in half

– 1 medium onion, cut into large pieces

– 4 lemons (2 for cooking, 2 for serving)

– 1/2 cup unsalted butter

– 4 cloves garlic, smashed

– 1/3 cup seafood seasoning

– 1/2 teaspoon salt

– 1/2 teaspoon black pepper

– 2 tablespoons fresh parsley, plus more for garnish

Instructions

1-Fill a large pot with water and add quartered lemons, onion, smashed garlic, seafood seasoning, salt, and pepper. Bring it to a boil over high heat; this step infuses the water with great taste right from the start.

2-Add the halved small red potatoes and cook for 10-12 minutes until they’re just barely fork tender; this ensures they hold up well without getting mushy.

3-Once the potatoes are nearly done, add the corn pieces and sausage, then cook together for 5-6 minutes to let the flavors mingle.

4-Next, add the shrimp and cook for an additional 2-3 minutes until the shrimp turn pink and curl slightly; watch closely to avoid overcooking.

5-Drain the water and transfer everything to a large baking sheet. In a separate bowl, melt the unsalted butter, then whisk in salt, pepper, and chopped parsley.

6-Pour half of the butter mixture over the ingredients and stir to coat evenly. Reserve the rest for serving, and garnish with extra parsley, lemon wedges, and a sprinkle of seafood seasoning if you like.
