– 1 pound pork sausage

– 1/2 cup (1 stick) butter

– 1 yellow onion, diced

– 4 garlic cloves, minced

– 1 cup diced celery (about 3 stalks)

– 1 1/4 teaspoons poultry seasoning

– A dash of white pepper

– Salt and black pepper to taste

– 1 1/2 cups chicken stock, added gradually to moisten the mixture

Instructions

1-First, tear the bread into bite-size pieces and set it aside. Preheat your oven to 375°F (190°C) to get everything ready for baking.

2-Next, in a large skillet, cook the pork sausage over medium heat until it’s fully done, breaking it into smaller pieces as it browns. Once cooked, transfer the sausage to a bowl with the bread, but leave some drippings in the pan for extra flavor.

3-Then, add the butter, diced onion, minced garlic, diced celery, poultry seasoning, white pepper, salt, and black pepper to the same pan. Sauté these until the vegetables are tender and aromatic, which takes about 5-7 minutes.

4-After that, pour the vegetable mixture over the bread and sausage in the bowl, and mix everything well to combine. Gradually stir in the chicken stock to ensure even moisture, adjusting as needed so the mixture is damp but not soggy.

5-Finally, transfer the mixture to a greased 2 1/2-quart casserole dish and bake it uncovered for 25 to 30 minutes. This will give you a crispy top while keeping the inside moist and flavorful. The total preparation time is about 55 minutes, including cooking the sausage and baking.
