👁️ Antipasto Eyeballs offer a spooky and savory snack that’s quick to prepare and perfect for Halloween parties.
🧀 Combining creamy mozzarella, savory prosciutto, and pimento olives, they deliver delightful flavors with a festive presentation.

  • Total Time: 10 minutes
  • Yield: 16 eyeballs

Ingredients

– 16 small mozzarella balls

– 8 slices prosciutto

– 8 pimento-stuffed green olives (cut in half)

– Good quality olive oil for drizzling

– Balsamic glaze for drizzling

– Flaky sea salt for sprinkling

– Fresh basil leaves for serving

Instructions

1-Cut the 8 pimento-stuffed green olives in half, resulting in 16 halves to serve as the “pupils.”

2-Cut each of the 8 slices of prosciutto in half lengthwise for wrapping the mozzarella.

3-Drain the 16 mozzarella balls and use a small knife to cut a small piece at the top of each ball to create a slot for the olive.

4-Wrap each mozzarella ball with one half-slice of prosciutto, folding back the top to secure it, then place one olive half in the center.

5-Drizzle the assembled eyeballs with olive oil and balsamic glaze to taste, sprinkle with flaky sea salt, and serve on fresh basil leaves if desired.
