Ingredients

– 1 (11 oz) package Spring Mix Salad Blend

– 1 pound chicken breast, sliced

– 11 oz blackberries

– 8 oz strawberries, sliced

– 4 oz almonds, sliced

– 6 oz feta cheese, crumbled

– 2 oz Parmesan cheese, finely shredded

– 3/4 cup lemon zest, finely grated (optional)

– 1 1/2 lbs chicken breasts

– 1/4 cup lemon juice

– 2 tsp lemon zest

– 1 Tbsp olive oil

– 2 cloves garlic, finely minced

– 1/2 tsp salt

– 1/4 tsp black pepper

– 3/4 cup mayonnaise

– 4 Tbsp granulated sugar

– 1 1/2 Tbsp apple cider vinegar

– 1 tsp finely grated onion (can substitute 1/4 to 1/2 tsp onion powder)

– 1/2 tsp prepared mustard

– 1/4 tsp salt

– 2 tsp poppy seeds

Instructions

Step 1: Prepare the Grilled Lemon Chicken Place the chicken breasts in a resealable bag and flatten any thicker parts. In a bowl, whisk together 1/4 cup lemon juice, 2 tsp lemon zest, 1 Tbsp olive oil, minced garlic, 1/2 tsp salt, and 1/4 tsp black pepper. Pour the marinade over the chicken, seal the bag, and let it rest at room temperature for 20 minutes.

Step 2: Grill the Chicken Preheat your grill to moderately high heat and lightly oil the grates. Grill the chicken for 6-8 minutes per side until it reaches an internal temperature of 165 degrees F. Let it rest, covered with foil, for 10 minutes before slicing into 1/2-inch strips.

Step 3: Make the Poppy Seed Dressing In a small bowl, whisk together 3/4 cup mayonnaise, 4 Tbsp granulated sugar, 1 1/2 Tbsp apple cider vinegar, 1 tsp finely grated onion (or onion powder), 1/2 tsp prepared mustard, and 1/4 tsp salt until the sugar dissolves. Stir in 2 tsp poppy seeds, then refrigerate for 30 minutes.

Step 4: Assemble the Salad Layer the Spring Mix Salad Blend on plates, then top with sliced strawberries, blackberries, sliced almonds, crumbled feta, and finely shredded Parmesan cheese.
