Ingredients

– 1 tablespoon yeast

– 1 tablespoon sugar

– 1 cup warm water

– 2 1/2 cups flour

– 1 teaspoon salt

– 2 tablespoons butter for brushing

– 1 tablespoon fresh chopped rosemary

– 1 tablespoon fresh chopped rosemary for topping

Instructions

1-Combine 1 tablespoon yeast, 1 tablespoon sugar, and 1 cup warm water in a large bowl or food processor. Let it stand until the mixture becomes bubbly, which takes about 5-10 minutes.

2-Stir in 1 tablespoon butter, 1 teaspoon salt, and 2 cups of the flour. Mix until well combined.

3-Add 1 tablespoon of fresh chopped rosemary and continue stirring to incorporate it evenly.

4-Knead the dough by hand for about 10 minutes or in a food processor for about 5 minutes until it’s smooth and elastic. Add more flour if needed to get the right consistency.

5-Lightly oil a bowl, place the dough inside, cover with a towel, and let it rise in a warm place for 1 hour until doubled in size.

6-Punch down the risen dough and divide it in half. Let it rest for about 5 minutes.

7-Spray a baking pan or cookie sheet with cooking spray and shape each dough piece into a small rounded oval loaf.

8-Sprinkle the remaining 1 tablespoon of rosemary over the tops and press it lightly into the surface.

9-Let the loaves rise again until doubled, about 45 minutes.

10-Preheat the oven to 375Β°F (190Β°C).

11-Bake the loaves for 15 to 20 minutes until lightly browned.

12-Carefully remove from the oven and brush the tops generously with additional butter. Sprinkle lightly with salt if desired.
