Ingredients
600 700 g sweet potato, peeled
1 1/2 tbsp olive oil
100 g rocket salad/arugula
1/2 cup (70g) pecans
1 tsp oil
100 g bacon, chopped (lean)
60 g goats cheese or Danish feta
1 tbsp honey
2 tbsp fresh lemon juice
2 tbsp extra virgin olive oil
1/2 tsp Dijon mustard
Salt and pepper, to taste
Instructions
1-First, follow these directions to get started. Preheat the oven to 220Β°C (430Β°F). Then, peel and slice the sweet potato into 1.5cm thick rounds, halving larger pieces for even cooking.
2-Next, toss the sweet potato slices with 1 1/2 tbsp olive oil, salt, and pepper, ensuring theyβre well-coated before spreading them on a baking tray. Roast for 20 minutes, then turn the slices and roast for another 10 minutes until theyβre golden and tender. While the potatoes are roasting, you can prepare the rest combine all dressing ingredients in a jar and shake well to blend the flavors perfectly.
3-Once the sweet potatoes are done, toast the pecans in a dry skillet over medium-high heat for about 3 minutes until fragrant, then remove them. In the same skillet, heat 1 tsp oil and cook the chopped bacon until itβs golden and crispy. Finally, in a large bowl, mix the roasted sweet potatoes with the rocket salad, most of the bacon, most of the pecans, and most of the cheese, then drizzle with most of the dressing and toss gently.
4-Transfer the salad to a serving bowl and garnish with the reserved bacon, pecans, and cheese, adding the remaining dressing. Serve immediately for the best taste.
