Instructions

1-First, add raspberries and lemon juice to a saucepan over medium heat. Once heated, mash the raspberries and simmer for about 10 minutes to release their juices. Strain the mixture through a fine mesh sieve into a bowl, discarding solids, then cover and chill the raspberry reduction for about 2 hours.

2-Next, cream the softened butter on medium speed using an electric hand mixer or stand mixer until itโ€™s light and fluffy. Gradually beat in the confectionersโ€™ sugar on low speed to avoid mess, mixing until fully incorporated. Add the raspberry reduction one tablespoon at a time until the frosting reaches the desired consistency and color, typically around 1/4 cup of reduction.

3-The total preparation time includes 10 minutes of prep, 10 minutes of cook time, and 2 hours of chill time, making the whole process about 2 hours and 20 minutes. Once ready, use the frosting immediately for the best texture on your desserts.

4-Wash and dry fresh raspberries to start clean.
