  • Total Time: 1 hour 30 minutes

Ingredients

Scale

Two 12-ounce bags frozen raspberries

1/2 cup granulated sugar (adjust to taste based on tartness)

2 tablespoons flour

1 tablespoon cornstarch

Juice of one lemon

3 cups rolled oats (old fashioned rolled oats recommended)

3 cups flour

2 cups brown sugar, loosely packed

1 teaspoon baking powder

1 1/2 cups melted butter (salted butter preferred)

1/2 teaspoon salt

Instructions

1-Preheat your oven: Start by preheating your oven to 350°F (175°C) that’s the magic temperature for getting that golden top.

2-Tackle the raspberries: place two 12-ounce bags of frozen raspberries in a colander, rinse with warm water, and let them drain for about an hour until they’re softened.

3-Mix the filling: Once done, mix them with 1/2 cup granulated sugar, 2 tablespoons flour, 1 tablespoon cornstarch, and the juice of one lemon to create a luscious filling.

4-Combine crumble layer ingredients: combine 3 cups rolled oats, 3 cups flour, 2 cups loosely packed brown sugar, 1 teaspoon baking powder, 1 1/2 cups melted butter, and 1/2 teaspoon salt in a bowl until it’s nice and crumbly.

5-Press and bake base: Press two-thirds of this mixture firmly into a parchment-lined 9×13 inch baking pan and bake it for 10 minutes.

6-Add filling and top crumble: Now, spread the raspberry filling evenly over this base, then sprinkle the remaining one-third of the crumble on top.

7-Bake again: Pop it back in the oven for 25-30 minutes until it’s golden and bubbly.

8-Finishing touches: After baking, let the bars cool a bit, then chill them in the fridge for a few hours for easier cutting this step really helps with texture! If you’re in a rush, you can serve them warm like a soft crisp.
