Ingredients
– 1/2 cup unsalted butter, melted and cooled to room temperature
– 1/2 cup light brown sugar
– 1 1/2 cups all-purpose flour
– 1/2 teaspoon baking soda
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground cloves
– 1 1/2 cups pumpkin pie mix from a can
– 1 large egg
– 1/2 teaspoon pure vanilla extract
Instructions
1-First, grease and line an 8-inch square pan with parchment paper, then preheat your oven to 375°F (190°C). In a bowl, whisk together the dry ingredients: 1 1/2 cups all-purpose flour, 1/2 cup light brown sugar, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground cloves.
2-Next, add 1/2 cup of melted and cooled unsalted butter to the dry mix and stir until it forms a crumbly dough. Reserve about 3/4 cup of this mixture for the topping and press the rest evenly into the prepared pan to create the crust. In another bowl, combine 1 1/2 cups pumpkin pie mix, 1 large egg, and 1/2 teaspoon pure vanilla extract until smooth, then pour this filling over the crust.
3-Sprinkle the reserved crumb topping over the filling and bake for 28 to 32 minutes, or until the topping turns golden brown. Let the bars cool completely before cutting them into squares for nine servings. For a fun twist, check out our pumpkin pie brownies recipe if you want to experiment with similar flavors.
