1 cup oatmeal (old-fashioned whole rolled oats, quick oats, or instant oats)
1/2 cup whole wheat flour or gluten-free flour blend
1 tablespoon ground flaxseed (optional)
1 teaspoon cinnamon
1 to 2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 large eggs (or flax egg substitute)
1 cup pumpkin puree
1/4 to 1/3 cup pure maple syrup or coconut sugar/brown sugar
3 tablespoons melted coconut oil or butter
1 teaspoon vanilla extract
1/3 to 3/4 cup mix-ins such as chocolate chips, raisins, or nuts

Instructions

1. Preheat oven to 350°F (175°C) and prepare an 8×8-inch baking pan with nonstick spray or parchment paper.
2. Pulse whole rolled oats in a food processor (optional) for improved texture.
3. In a medium bowl, combine oats, flour, ground flaxseed, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt.
4. In a large bowl, whisk together eggs (or flax egg), pumpkin puree, maple syrup, melted coconut oil, and vanilla extract until smooth.
5. Stir dry ingredients into wet ingredients until just combined. Fold in mix-ins. The batter will be thick.
6. Spread batter evenly in the prepared pan. Press additional mix-ins on top if desired.
7. Bake for 20-24 minutes, or until golden on the edges and a toothpick comes out clean.
8. Cool completely in the pan on a wire rack before slicing into 16 squares.
