– 1/4 cup milk (dairy or nondairy)

Instructions

1-Preheat the oven and prepare the muffin pan: Start by preheating your oven to 425°F and preparing a muffin pan with liners or nonstick spray. This high initial temperature helps the muffins rise beautifully, giving them that perfect dome shape.

2-Mix dry ingredients: First, in a large bowl, whisk together 1 and 3/4 cups all-purpose flour, 1 teaspoon baking soda, 1 and 1/2 teaspoons ground cinnamon, 1 and 1/2 teaspoons pumpkin pie spice, 1/4 teaspoon ground ginger, and 1/2 teaspoon salt. This step ensures all the dry ingredients mix evenly for the best flavor in your pumpkin muffins.

3-Mix wet ingredients and combine: Next, in another bowl, whisk 1/2 cup vegetable oil or melted coconut oil with 1/2 cup granulated sugar, 1/2 cup packed light or dark brown sugar, 1 and 1/2 cups canned pumpkin puree, 2 large eggs, and 1/4 cup milk.
