– 1 teaspoon salt
– 1.5 cups chopped spinach
– 1/2 cup finely diced chives
– 1.5 cups shredded cheddar cheese (divided)
– 2 cups cooked diced ham
– 2 tablespoons diced jalapenos
– 2 cups cheddar cheese
– 1 lb cooked ground chicken or turkey sausage
– 2 cups cheddar cheese
– 1/2 cup feta cheese
– 1 diced red bell pepper
– 1.5 cups spinach
– 2 cups ham (optional)
– 1.5 cups finely diced broccoli
– 1.5 cups shredded cheddar cheese
Instructions
1-Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
2-Whisk together 1 and 3/4 cups plain 2% Greek yogurt and 4 eggs in one bowl until smooth.
3-In another bowl, combine 2 and 1/2 cups all-purpose flour, 1/4 cup ground flaxseed (if using), 1 teaspoon garlic powder, 1/2 teaspoon red pepper flakes, 1 tablespoon baking powder, and 1 teaspoon salt.
4-Gradually mix the dry ingredients into the wet mixture until combined.
5-Add 1.5 cups chopped spinach, 1/2 cup finely diced chives, 1 cup shredded cheddar cheese, and 2 cups cooked diced ham. Mix thoroughly. Lightly flour hands if the dough sticks.
6-Divide the dough into 12 equal disk-shaped biscuits, about 1 inch thick (1/3 cup each). Place on the tray with space between.
7-Sprinkle remaining 1/2 cup cheese on top. Bake at 400°F for 5 minutes.
8-Reduce temperature to 350°F (177°C) and bake 20 more minutes without opening the oven. Done when bottoms are golden and tops brown.
9-Serve warm, paired with berries or extra Greek yogurt.
