Ingredients

– 2 cups all-purpose flour

– 1/8 teaspoon salt

– 2 teaspoons baking powder

– 1/3 cup poppy seeds

– 1 3/4 cups granulated sugar, divided

– 1/2 cup unsalted butter

– 1 cup milk, divided

– 1 teaspoon vanilla extract

– 4 large egg whites

– Powdered sugar for garnishing, if desired

Instructions

1-First, preheat your oven to 350 degrees F and grease and flour a bundt pan. This sets the stage for even baking and easy removal.

2-Then, cream together 1/2 cup unsalted butter and 1 1/4 cups of the granulated sugar until smooth, and stir in 1/4 cup milk and 1 teaspoon vanilla extract.

3-Next, sift together 2 cups all-purpose flour, 1/8 teaspoon salt, and 2 teaspoons baking powder, then stir in 1/3 cup poppy seeds. Set this aside for now.

4-Afterward, alternate adding the flour mixture and the remaining 3/4 cup milk to the butter mixture, stirring gently and starting and ending with the flour.

5-Once mixed, beat 4 large egg whites in a bowl until they form soft peaks, then beat in the remaining 1/2 cup granulated sugar. Fold these into the batter gently to keep it airy. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick comes out clean.
